Pleco's are opportunists: they eat everything edible, wheter vegetable or meat. Some are even predatory, and hunt snails, shrimp and other crustaceans.
But I doubt your little dude actually killed the shrimp - I assume you have a Common Pleco (brownish, spots), and they are not predatory. And even a carnivorous pleco that measures 1,5" would be unable to kill a 2" shrimp.
So I think your shrimp died first, and then the body was found by the pleco, who wouldn't pass on a free meal.

How? A 1,5" pleco only has a tiny sucker mouth, and not even remotely enough strength to kill an agile 2" shrimp.
Maybe the shrimp molted, and the pleco was just munching on the discarded exoskeleton? I've been fooled that way in the past too, only to discover the shrimp alive and kicking a few days later.
