I'm watching the larger of my two cons tear the hell out of a plant in my tank right now. Is he eating it? Or is he just in a rotten mood and taking it out on the plant?

Sometimes they will eat plants, more often they will just move them were they want them. Convicts do a lot of redecorating, so I would think he is moving it. Check to see if he is spitting the plant back out.

He might not be able to move it, so he is tearing it up cause he doesn't like it in HIS tank.
