Feed him the same as other piranha's: fish (fillet, whole fish, feeders as a treat only), shrimp/prawns, krill, mosquito larvae, blood worms, earth worms, etc.
As far as getting out of shock goes - I assume you mean him being comfortable in his new tank, right?
Could be anything between a few minutes and a lot of months...
