I've redecorated my tank quite some times, but here are some pics of my setup (the first two pics are the present-day setup, the others are what it used to be):

I think when designing any fish tank you must remember that you are creating a home for your fish, not an art exibition.
You should provide suitable cover, using rocks, plants or driftwood.
and also leave enough room for the fish to swim around in.

I personally have driftwood, real and plastic plants, rocks and slate.
and I move them around every so often, sometimes I have loads of cover and sometimes only minimal cover.

when choosing rocks and wood you should ensure they are safe for your fish, an easy way to do this is to buy from your local fish shop.
and you should also soak all wood until it doesn't stain the water, before adding to your tank.
