In the near future I plan to set up a 125 gallon tank, with either 5 cariba, or 6-7 natts/red bellies. I would be feeding a mixture of frozen shrimp, fish, squid, and octopus, and if I can cichlid pellets. I would like to a have a moderately planted tank, with a high current. I also like some activity in the tank. Which group of fish would be most interesting to keep, I know you might say cariba, but what are some positives about natts too. And which would you say are more active, throughout their life. And how active?

But since cariba are meaner, wouldn't there be more torn fins?
Not really, when I had just reds and cariba they lived very peacefully together. I would get the occasional fin nip but not often. Since I added different pygos the aggression has gone up but for now they are playing nicely.

i would also go mixed 3 cariba and 3 natts youll save some money also and probably wont see that much of a difference in temprement when they are mixed ,where as all natts maybe a lot more skittish but it does depend on the individual fish,
since i got rid of my 2 largest reds keeping 2 smaller ones with a piraya the 2 sml reds swim constantly almost which they never did before and the piraya is just keeping out their way but probably needs time to settle.
i think the 2 larger reds kept the smaller ones from doing what they wanted too do

Cariba are more active throughout their life due to territorial behavior!

The best looking if you want them for shoal!

Forget about Natts!
